This coleslaw is one of the easiest ways to combine a few simple ingredients to make your taste buds sing!

You can use whichever type of cabbage you can find in the market. I only had red cabbage and kale on hand but you can add additional seasonal vegetables to this coleslaw. The new season pears are nice and crunchy and they add a nice sweetness to the coleslaw. If you want to counter balance that sweetness with some tartness, then add in some pomegranate kernels. Sprinkle walnuts, pepitas and sunflower seeds when you are ready to eat and you have yourself a perfectly satisfying meal, both in terms of nutritional value and taste.

Kale coleslawIngredients: (serves 2)

1/4 small red cabbage, thinly sliced

1/2 cup shredded kale leaves (a few young leaves)

1 pear or apple, cored and cut into thin strips

a small handful of raisins

a small handful of fresh pomegranate kernels

1/3 cup organic plain yoghurt

1 teaspoon raw honey (optional)

What to do:

1. Put all the ingredients except for the yoghurt and honey into a bowl and toss well.

2. If using honey, mix it with the and yoghurt in a separate bowl and then drizzle over the rest of the ingredients. Toss well and season to taste.
