If you are a fan of coconut and chocolate, then these brownies are for you. Using different derivative from coconuts, i.e. coconut oil, dessicated coconut and coconut flour, these brownies rate pretty high on the nourishing scale.
All the ingredients are nutrient-packed: dessicated coconut and coconut flour are high in fibre; coconut oil is high in medium chain triglycerides; raw cacao (cold-pressed unroasted cocoa beans) is high in phytonutrients; eggs are packed with nutrients and macadamia nuts are rich in vitamins, minerals and dietary fibre. With all these goodness in them, these brownies are very satiating and a small piece goes a long way.
Ingredients:
1/2 cup cold pressed extra virgin coconut oil (if not in liquid state, submerge glass jar in hot water)
1/2 cup raw cacao
6 eggs
1 tsp vanilla essence
2/3 cup Rapuda sugar
1/4 cup raw honey
1/2 cup coconut flour
1 cup dessicated coconut
6 large raw macadamia nuts, roughly chopped
Method:
1. Preheat oven to 150ºC. Line a square baking pan (18cm) with baking paper.
2. In a large bowl, mix coconut oil with cacao then whisk in eggs, sugar, honey and vanilla. Add in coconut flour, dessicated coconut and macadamia nuts.
3. Pour the thick mixture into the prepared pan and bake for 20 – 30 minutes or until set in the middle. You don’t want to over bake, so check after 20 minutes.
