These muffins are light but satisfying and they taste so good. The bananas give enough sweetness without sending your blood sugar level sky rocket. There is plenty of protein and fibre in the other ingredients to make these muffins satieting.
Ingredients:
2 large bananas, just ripe and without brown spots
3 organic eggs
1 teaspoon vanilla essence
4 tablespoon coconut oil, melted
1/4 cup each of coconut flour, almond meal and flaxseed meal
1/4 teaspoon baking soda
1 teaspoon baking powder
pinch of Himalayan salt
1/2 cup walnuts, roughly chopped
What to do:
1. Preheat oven to 180 °C and line muffin tray – this recipe will fill a 6 cups muffin tray.
2. Mash the bananas in a large bowl, add in eggs, vanilla extract and coconut oil and mix well.
3. Fold in the rest of the ingredients until they are just incorporated. Do not over mix.
4. Divide the batter into the muffin cups and bake for 25-30 minutes. Allow to cool before devouring.
