It is apple season and as lovely as it is crunching on fresh apples, baking them brings out their unique flavours. What’s more, the aroma from baking apples will simply warm the whole kitchen and adjacent rooms, perfect for a cool winter day. Apples are the only source of sweetness for this recipe, so depending on the variety of apples you use, the taste will be quite different. Choose your favourite variety or try one of the following:

Pink lady: a fizzy, almost effervescent flavour but quite sweet.
Royal gala:  dense, sweet, aromatic and juicy.
Fuji: firm-textured, crisp and juicy with honey sweet taste.
Braeburn: a unique flavour that combines sweetness and tartness.

Ingredients:

3 cups apples, grated (roughly 3 medium size apples)
2 teaspoons baking power
1/4 teaspoon Himalayan/sea salt
3 organic eggs
55 g organic butter, melted (you could also use 1/4 cup of coconut oil, mild olive oil, or macadamia nut oil)
3/4 teaspoon cinnamon
1 teaspoon fresh ginger, grated
1 teaspoon vanilla extract
1 cup wholemeal spelt flour
1/3 cup each of almond meal, flaxseed meal and dessicated coconut
1/2 cup walnuts, roughly chopped

1 teaspoon coconut sugar (optional)

What to do:

  • Preheat the oven to 180°C (160°C fan force). Line a rectangular loaf tin with baking paper.
  • Mix the grated apples thoroughly with the baking powder, salt, eggs, butter, cinnamon, ginger and vanilla extract. You can use a food processor to grate the apples although it takes no time to do it by hand.
  • Add in the spelt flour, almond meal, flaxseed meal, dessicated coconut and walnuts and mix until just combined.
  • Pour batter into the prepared loaf tin. You could decorate the top with thinly sliced apples and/or sprinkle with coconut sugar.
  • Bake for 45 minutes or until a skewer inserted comes out clean.
  • Allow to cool before slicing.
  • This is lovely on its own but spread a little coconut or almond butter over a slice and it just takes it to the next level, both for your taste buds and nutritionally speaking. Enjoy!
