How can a cookie be no-bake, you might ask. Well, hold your skepticism until you try these cookies as the results will speak for themselves. What’s more, these cookies contain no eggs which mean they are vegan friendly. They do contain oats, so if you are making them for someone with coeliac, make sure you look for oats that are certified gluten free. Although there is no baking time, these cookies do need to be in the freezer for at least 2 hours prior to serving, so make sure you allow yourself enough time.
Ingredients (make 8 cookies)
- 1/2 cup rolled oats
- 1/4 cup unsweetened shredded coconut
- 4 dried organic apricots, diced
- 1/2 teaspoon cinnamon powder
- 1 tablespoon protein powder (optional)
- 2 tablespoons extra virgin coconut oil
- 2 tablespoons local honey
- 1/2 teaspoon vanilla extract
What to do:
- In a medium bowl, mix together all the dried ingredients before pouring over the coconut oil, honey and vanilla extract.
- Stir until everything is well-mixed.
- Use a tablespoon to scoop out some of the mixture and roll it into a ball and place onto a cookie sheet. You should be able to make 8 small sized balls. Once you have all the cookie balls, gently flatten them with a fork so they resemble a cookie. Place the cookies in the freezer for at least 2 hours – they would have hardened and give you the cookie crunch.
