These nutty cookies are full of nuts, macadamia nuts of course, and almond, in grinded form. The texture is slightly different to conventional cookies but they are equally if not more delicious. They are paleo friendly and are gluten free, but you don’t have to be following any specific diet to enjoy them. With all the nutty goodness, these cookies are more filling than your usual kind.
Ingredients:
1 1/2 cup almond meal
3/4 cup dessicated coconut
1/2 cup chopped raw macadamia nuts
1/3 cup Rapuda sugar
1/2 cup melted coconut oil
2 eggs
1 tsp vanilla essence
What to do:
1. Preheat oven to 180 degrees Celsius and line a baking tray with baking paper.
2. Whisk the eggs, vanilla essence and coconut oil in a bowl then stir in the rest of the ingredients.
3. Place round tablespoonfuls of the mixture onto the baking tray, space each spoonful about 2 cm apart.
4. Bake for 15 mins or until golden brown. Allow to cool before devouring. These will keep for up to 5 days in an air tight container but I doubt that will last more than a day or two.
