These little morsels are the perfect snack. They take no time to prepare, are high in protein (from the almonds) and fibre (from the figs) and are full of flavour. What’s more, these cookies are gluten and free and has no added sugar.
Ingredients:
2 cups almond meal
1 cup dried figs, hard tips removed
2 tsp grated lemon zest
1 tsp vanilla essence
3 tbl coconut oil (melted)
1/2 tsp Himalayan salt
What to do
1. Preheat the oven to 150°C. Line a baking sheet with baking paper.
2. Put almond meal, figs, lemon zest, vanilla and salt in the food processor. Pulse a few times, then process until all the ingredients are incorporated (see pic). Slowly add the coconut oil a tablespoon at a time. It should now resembles wet sand.
3. Scoop out half a tablespoon of the mixture and press into a ball. The dough is quite loose and you need to be gentle yet firm when shaping these balls. Place the balls onto the baking paper and flatten slightly.
4. Bake on the upper third of the oven for 12-15 mins or until they are lightly browned. You must allow them to cool as they are soft and crumbly when they first come out of the oven. Enjoy!
